Ekiben (駅弁) are a great way to introduce visitors and even locals to the delicious bounty of foods in a particular prefecture. As I love me some Niigata ekiben, I came across an article showcasing a new addition to the already delicious options: Ebi Senryo Chirashi, which is a colorful combination of squid, eel, shrimp and egg .
